Protein Banana Bread Muffins

Have banana bread muffins, will travel.

You guys. These are so so good. We highly recommend eating one fresh out of the oven while they are hot because we couldn't resist. They are moist but slightly crispy on the outside and such an easy grab-and-go snack.


  • 2 scoops Whey Back Vanilla Grass-Fed Protein
  • 1 C. flour
  • 2 t. cinnamon
  • 1 t. nutmeg
  • 1 t. baking powder
  • 1 t. baking soda
  • 1/2 t. salt
  • 3 large overripe bananas, mashed
  • 1 egg
  • 1/4 C. honey or maple syrup
  • 1 T. olive oil
  • 1 t. vanilla
  • Optional: 1 C. add-ins (chocolate chips, nuts)

  1. Preheat oven to 425F and prepare muffin pan.
  2. Mix dry ingredients and set aside.
  3. Mix wet ingredients until completely smooth. Be sure to mash the bananas well!
  4. Stir wet ingredients into dry ingredients. Combine well but no need to over mix!
  5. Divide batter into 12 muffin cups. 
  6. Bake at 425F for 5 minutes then immediately turn the heat down to 350F (leave the pan in the oven). Bake for another 12 minutes.
  7. Be sure to eat one fresh and hot out of the oven.

Pro Tip: Add any mix-ins into the dry ingredients and toss with the flour so that they stay spread across your muffins and don't sink to the bottom.
