These crunchy peanut butter & jelly cups are the ultimate bite-sized upgrade — made with wholesome ingredients like protein powder, applesauce, crispy quinoa, and topped with a dollop of homemade jam. They’re freezer-friendly, kid-approved, and just the right mix of nostalgic and nourishing. Whether you're tossing one into a lunchbox, grabbing it on your way out the door, or sneaking one for dessert, this is one snack that always hits the sweet spot.
Ingredients:
- ½ cup uncooked white quinoa
- 1 full scoop Earth Fed Muscle Strawberry Feels whey protein powder (**Note: Jam Session Berry Blast would be delicious, too!)
- 1 full scoop Earth Fed Muscle Crunch Time whey protein powder
- 2 tbsp all-natural peanut butter, drippy
- ⅓ cup unsw. Apple sauce
- ¼ cup raspberries (or any berry of preference)
- 1/4 cup chopped peanuts
- 1.5 teaspoons coarse salt

Spray a silicone muffin pan with coconut oil or line a muffin tin with muffin liners (spray the liners!). Set aside.

Heat a large skillet over medium-high heat and spray the pan with avocado oil. Once melted, add the quinoa and stir to coat. Reduce heat to medium and cover the pan. After a few minutes, you’ll hear the quinoa start to pop. Stir occasionally and let it cook for about 10 minutes, until it’s golden brown and toasted. Remove from heat and transfer to a mixing bowl.

Add the peanut butter, protein powder, applesauce, and peanuts. Mix thoroughly until little to no clumps remain. Place a dollop of this mixture into each of your lined cups (makes 7). Next, place a 1-2 tsp of the quinoa into each cup and stir with a knife.

Next, smash your raspberries (or choice berries) in a small side bowl to make a simple, homemade jam. Place 1 tsp of your homemade jam into the middle of each cup.

Sprinkle each cup with sea salt and place the muffin pan in the freezer for 1 hour.

Remove from the muffin tin and place the cups into a freezer-safe container and store them in the freezer!
