Skip the griddle and the flipping. Mix everything together, bake or microwave, and you have breakfast ready to go.
2. They're completely customizable.
Think Greek yogurt and berries, nut butter and banana, a drizzle of maple syrup, cinnamon, or whatever toppings you love.
3. They're made for busy mornings.
Pack one for work, take it with you to the gym, eat it between appointments, or bring it along to your kid's early Saturday morning soccer game.
Basically, it's a pancake breakfast that actually fits into a busy schedule.

Instructions
Oven Method
-
Preheat oven to 350°F.
-
Grease a small oven-safe baking dish or bowl.
-
Add all ingredients and whisk until a smooth batter forms. If the batter is too thick, gradually add 1–2 tablespoons of milk.
-
Bake for 22- 25 minutes, until the edges are lightly golden and the center is set.
-
Let cool slightly, then add your favorite toppings.
Microwave Method
-
Add all ingredients to a microwave-safe bowl and mix until smooth.
-
Microwave on high for 2–3 minutes, checking at the 2-minute mark. The pancake bowl is ready when the center is no longer jiggly.
-
Top and enjoy!
Make It Meal Prep Friendly
Once baked, these pancake bowls can be stored in the refrigerator for up to 5 days. We love using individual glass containers so you can simply pop the lid on once the pancake bowl has cooled and have an easy grab-and-go breakfast ready for the week.
When you're ready to eat, remove the lid and microwave for approximately 30–60 seconds, or until warmed through.
Topping Ideas
Keep it simple or get creative:
-
Greek yogurt + fresh berries
-
Banana + cinnamon
-
Nut butter + berries
-
Maple syrup + cinnamon
-
Apples + extra cinnamon
-
Greek yogurt + a drizzle of maple syrup
The best part? You can make a batch and change up the toppings throughout the week so breakfast never feels boring.
