Ingredients (Makes 7-8):
½ cup + 2 tbsp Plain Non-Fat Greek Yogurt
⅔ cup 2% Cottage Cheese
¼ cup Egg Whites
¼ cup (1 scoop) Earth Fed Muscle Snickerdoodle Whey/Casein Protein Powder
2 tsp Sugar-Free/Fat-Free Cheesecake Pudding Mix
1 tsp Sweetener (ideally Monk Fruit)
½ tsp cinnamon
⅓ - ½ cup crunchy cereal (ideally minimal ingredient brands)
Directions:
-Add all your ingredients into a small blender and blend till smooth.
-To make the “crust layer”, add half your batter to a bowl. Mix in ground cinnamon and crushed cereal. Mix.
-Add the batter from that bowl evenly to your 7-8 small cupcake molds. (Used silicone molds in this recipe).
-Then top your “crust later” with the rest of the smooth batter evenly to all the molds. This is the cheesecake layer!
-Air fry on 250 degrees F for 12-14 minutes.
-Once done, let them cool in the cupcake molds for about 10 minutes. Then transfer to the fridge to cool for another 30-60 minutes. (Ideally overnight!)
Once ready, layer with whipped whipped cream and a sprinkle of cinnamon!
