Pumpkin Spice Protein Muffins

These muffins can be an amazing option for breakfast, but really, who doesn't love a muffin any time of day. We're 100% turning these into our pre-workout snack because a pumpkin-spiced pump sounds like music to our ears.

Ingredients:

  • 1 1/4 C. oat flour
  • 1 C. pumpkin puree
  • 2 scoops Witch's Whey Pumpkin Spice Grass-Fed Whey
  • 1 t. baking powder
  • 1 t. baking soda
  • 1 t. cinnamon
  • 1 t. pumpkin pie spice
  • 2 eggs
  • 1 C. greek yogurt
  • 1/2 C. chocolate chips

Directions:

  1. Preheat the oven to 350F and line or grease your muffin pan.
  2. Mix all ingredients except chocolate chips. Batter should be fluffy!
  3. Fold in chocolate chips.
  4. Divide batter into 12 muffins. Bake for 28 minutes (if baking a full tray of 12 - if baking in a tray of 6 at a time, reduce baking time to 23 minutes).

Macros: 9g Protein, 14g Carbohydrates, 3g Fat

Pro Tip: These muffins are delicious but are not super sweet. Add 1-2 T. maple syrup to sweeten if you prefer it!
