Tired of seeing all the random oils and thickeners in your protein bars? We have your solution: Post-Brunch Protein Crunch Bars. They’re like a cross-over between rice krispie treats, peanut butter cups, and the granola bars you loved as a kid.
Ingredients
- 2 scoops Power Couple Whey Protein
- 1½ cups crispy rice cereal
- ¾ cup oat flour (or blended oats)
- 2 tbsp cacao powder
- 2 tbsp maple syrup or honey
- 2 tbsp natural peanut butter
- ¼ cup unsweetened applesauce
- ½ cup crushed pretzels (about 1 oz)
- 1–2 tbsp milk of choice (to help bind if needed)
- Pinch of sea salt
- Optional: 2 tbsp mini dark chocolate chips or cacao nibs
- Optional topping: melted dark chocolate drizzle (1–2 tbsp)
Directions:
- Mix dry ingredients (except pretzels): crispy rice, oat flour, protein powder, cacao powder, sea salt.
Whisk wet ingredients: peanut butter, maple syrup, applesauce. Warm gently if needed. - Combine wet and dry ingredients; add milk if needed for binding.
- Gently fold in crushed pretzels and chocolate chips/nibs if using.
- Press mixture firmly into parchment-lined pan. Flatten evenly.
- Optional: drizzle melted dark chocolate and sprinkle flaky salt on top.
- Chill for 30 minutes or until set. Slice into bars and enjoy!
