Sure, you can add collagen to your coffee or tea in the morning. But why not combine the skin-strengthening and joint pain-reducing supplement with something delicious and cozy like rice pudding?
Most rice puddings are loaded with sugar, but you'll find this one is refined sugar-free! Sweetened naturally with a bit of maple syrup and flavored with vanilla and cinnamon, you won't miss your grandma's rice pudding.
Start by adding the water, milk, unrinsed rice, maple syrup and cinnamon stick to a small pot. Bring to a simmer over
medium heat, stirring often to avoid burning the milk. Once the liquid begins to bubble, add the vanilla and reduce heat to the lowest level possible while still maintaining a simmer. Cook for 20-25 minutes or until rice is soft, stirring often.
When rice has reached your desired doneness (al dente to ....whatever the Italian is for mushy), remove the pot from the heat and stir through 2 scoops of collagen until dissolved completely. Divide rice pudding into 3 small ramekins and top with more cinnamon if desired. I like to pop them in the fridge and eat them cold. Macros for 1/3 servings:
